Crispy Beef Cones

How I Make It
- Heat the oil in a pan over medium heat. Once hot, add the chopped onion and garlic. Sauté for 1–2 minutes until the onions become soft and translucent.
- Add the ground beef to the pan. Cook for 2–3 minutes, breaking it up with a spoon, until the meat starts to change color.
- Season the beef with salt, black pepper, garlic powder, smoked paprika, red chili powder, and red chili flakes. Stir well and cook for another 1–2 minutes.
- Add the tomato paste and mix until fully incorporated into the beef.
- Pour in the water, cover the pan, and let the mixture simmer. Stir occasionally and cook for 10–12 minutes, until most of the liquid has evaporated and the mixture thickens.
- Once the beef is fully cooked and thickened, add the diced bell peppers and serrano peppers. Cook for another 3–4 minutes.
- Remove the pan from the heat and set the beef mixture aside.
- Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper.
- Shape each tortilla half into a cone and secure the seam with a toothpick. Lightly spray the outside with cooking spray.
- Place the cones seam-side down on the baking sheet. Bake for 8–10 minutes until golden and crisp.
- Remove the cones from the oven. Fill each cone with the beef mixture and top generously with shredded mozzarella.
- Stand the filled cones upright in a loaf pan and bake again for 8–10 minutes, until the cheese is melted and bubbly.
- Remove from the oven, garnish with dried parsley, and serve warm.
